Kumpir / Twice Baked Potatoes

Sebebini açıklamak için flashback'e ihtiyacım var.


Güzel günlerdi... Eve gelir gelmez günün makarna sosunu seçer, yanına mutlaka sarımsaklı ekmek iliştirmeyi ihmal etmez, bir kadeh kırmızı şarap ve yemek yapmaktan daha uzun süren film seçimi ve seyiri sonrası, o an spontane istenen tatlıyı da üşenmeden yapar ve evde keyif konseptini doyasıya yaşardım.

Gel zaman git zaman nedense sadece yaz aylarında makul bulduğum koşu/pilates/karın egzersizlerinden oluşan benim için son derece ekstrem sporlara girdiğim halde göbüşümün bir nebze dahi küçülmemesi sonucu Google'a danışmaya karar verdim. Karataylar, Atkinsler, Paleolar ve özellikle de Dr. William Davis'in Wheat Belly diyeti ne kadar dirensem de zorla beynimde kendilerine küçük bir yuva açtılar. Kendi aralarında tartıştıkları bazı nüanslar var ancak temelde aynı düşük karbonhidratlı, düşük şekerli ve yüksek proteinli, bir bakıma ilkel ve doğal bir beslenme tarzını savunuyorlar ve beynimdeki küçük evlerinde harmoni içinde yaşıyorlar. En önemli konu şu, iki haftalık şok diyetleri değil, hayat tarzı olarak benimsenmesi gereken fikirleri savunuyorlar.



Konunun kumpirle ne ilgisi var derseniz, aslında pek yok. Uçuşa gitmeden önce birkaç saatim var ve canım yazmak istedi.

Bugün hangi tarifi yayınlasam diye yemek klasörümde gezinirken gördüğüm yemekleri en son ne zaman yediğimi hatırlayamadım. Her gün yapacağı makarnanın hayaliyle eve gelen insan neredeydi? İki ay risotto yapılmadan geçtiyse hayatında bir eksiklik hisseden ben değil miydim? Evde sarımsak ve ekmek varsa literally her yemeğin yanına side dish olarak sarımsaklı ekmek yapılması gerektiğini savunarak ve gerek yok diyenlere şeytani gözlerle bakarak kaç kez dediğimi yaptırdım?


Sarımsaklı ekmeğe gerek yok mu dedin?

Şimdiyse hayatım paylaştığım tatlılar ve İtalyan lezzetlerinden öyle uzak ki. Yumurta, yoğurt, et, tavuk ve sebzeden oluşan dört duvarlı bir odaya hapsettim kendimi. Acaba bu blog üzerinden hala eğlenceli bir akşam yemeği dünyası olan bir insanmışım tadı almaya mı çalışıyorum? Zira yayınladığım şeylerle belki de son 6 aydır yediğim şeylerin hiçbir ilgisi yok!


Bu kumpiri ne zaman yaptığımı ve en son ne zaman yediğimi hatırlamıyorum evet. Çünkü patates bol nişasta içeriği yüzünden sebze olmasına rağmen pek çok diyette big no-no. Halbuki patatesle neler neler yapılır :(



Fakat egzersiz anlayışınız ayda iki üç kez on tekrardan oluşan birer set mekik çekmek ve otel odanıza giderken uzun koridorlarda yürümekten sıkıldığınız için tam olarak 30 saniye koşmaktan ibaretse, bu tarz bir beslenme bir yerde şart oluyor. Sıfır egzersiz ve aç kalmamak arasındaki denge bu tarz bir beslenme şeklinde gizli.

Demem o ki, paylaştığım tarifleri görüp "Ay sen nasıl bu kadar zayıf kalıyorsun?!" diye üzerime yürüyen arkadaşlarım, o yemekler artık midemde değil anılarımda yaşıyor. Sırrım bu.

Her ne kadar yemek yemeyi, yapmayı ve paylaşmayı sevsem de düşük karbonhidrat ve sıfır şekerli beslenmenin çok sağlıklı olduğuna inanıyorum. Ve şaka bir yana, elinizdeki doğal malzemelerle de son derece lezzetli yemekler yapabilirsiniz. Ancak bu demek değil ki ara sıra cheat hakkımız yok. Bu blog da o cheat zamanlarında açıp bakılacak bir rehber benim için. Herkes için de öyle olmalı diye düşünüyorum. Güzel yemek özel günler için, günlük hayat sağlıklı beslenmek için olsun.

I've got a confession to make.

I don't actually eat any of the stuff I share on my blog.

I used to. Not anymore though. Because... Well, let's get a flashback to explain it.


My favorite evening routine consisted of getting home, checking the fridge to see what almost dead ingredient I could turn into pasta sauce, a mandatory serving of garlic bread, a big glass of red wine and deciding on a movie which actually took longer than cooking. And finally, spontaneously picking a dessert and having no problem making it in the middle of the night.

Those were the days. I enjoyed them while they lasted. But eventually, I realized there was something really really wrong with my belly. It would not go away no matter how much work I put into my get-fit-quick summer fitness programs. Admittedly, I only got into the fitness state of mind when the summer neared, but still I worked really really hard, I ran for 30 minutes, did pilates for 30 minutes and ab egzersizes for 10 minutes almost everyday. And my belly just stayed put! No shit was given by my belly.

I had to ask for advice from my old buddy, Google. And I found the answer in Dr. William Davis's Wheat Belly book. It's quite similar to all the other new diets out there.A low carb, no sugar, high protein diet.

It took some getting used to but eventually you get accustomed to jumping back and forth between the endless choices of red meat, poultry, veggies and eggs. Not really. But it can be delicious and it is very very healthy. Some diets like Paleo rejects dairy as well, some don't. I gave up cow's milk but cannot live without yogurt and cheese so I'm going the Dr. Davis way.

So what does this have to do with twice baked potatoes you might ask. Probably nothing. But maybe everything. *dramatic music*

Yeah, no the reason is I was browsing through my Recipe shots folder to pick a new recipe to share with you today and all I saw were these sad delicious photos of meals that belonged to a bygone era. I don't eat these anymore! What happened to me? Wasn't it me that literally went home every day dreaming about the pasta I was gonna make? Have I not felt like something was missing if two months went by with no risotto day? Have I not always insisted that garlic bread is a perfectly acceptable side dish for literally every meal on earth and gave evil looks to those who dared to express that it was maybe not necessary?

What? No garlic bread?

Life sure has changed. My daily diet has none of the stuff I share on this blog. Am I somehow living through my blog still believing I have fun dinners? It's time to come clean. I don't. Not that I don't eat delicious food everyday but the ingredients shifted towards basically more boring ones.

Potatoes for instance, the main ingredient for twice baked potatoes, is a big no-no for many diet experts out there due to their high content of starch and carbs.Although they're the coolest vegetable out there, you can't have them.



That is if your understanding of exercise consists of doing ten crunches every other week or so, or doing a little jogging to your hotel room cause the hallway is too long and you're bored walking. Then you have to adopt this kind of lifestyle to stay fit without starving yourself.

It has worked wonders for me. But that doesn't mean I never ever cheat. Of course I do. And cheating days became speacial occassions. I don't waste a lovely piece of cheesecake on a normal day and then feel bad about it. I work for it. I persevere. And then when I know I deserved it, I eat it with ten times the pleasure.

So yes, this blog is a reflection of my cheat days. I highly recommend you look into the wheat belly diet and save these type of recipes for rainy days.

So, after all this sane advice, let's get some carbs :)

Malzemeler / Ingredients:

  • 4 patates / 4 potatoes
  • 4 yk tereyağ / 4 tbs butter
  • 1/2 kap doğranmış sucuk veya pastırma / 1/2 cup bacon
  • 1 kap ekşi krema (krema+sirke) / 1 cup sour cream
  • 1 kap kaşar veya cheddar / 1 cup cheddar or Monterey Jack
  • 1/2 kap süt / 1/2 cup milk
  • sıvı yağ / canola oil
  • yeşil soğan / green onions 
  • iki diş doğranmış sarımsak / two cloves garlic minced


 Öncelikle ekşi kremayı yaparak başlayalım. Bir paket kremaya bir kaşık sirke ekliyoruz.

Yeah, we make our own sour cream here. Cause we don't have it in the stores. It's too sad, I can't even...

 Güzelce çırpıp dinlenmeye bırakıyoruz.

Yep, still don't have sour cream.

 Fırınımızı 200 dereceye ayarlayıp güzelce yıkayıp kuruladığımız patateslerimizi yağlayıp çatalla deliyoruz ki patlamasınlar. 1 saat 15 dakika kadar pişiriyoruz.

Preheat oven to 400 F. Thoroughly wash and scrub potatoes, dry them. Rub them with some oil and pick a few holes with a fork so they don't explode in the oven. Bake for 1 hour and 15 minutes.


Patatesler pişerken malzemelerimizi doğruyoruz. Burada dilediğiniz malzemeyi ekleyip çıkarabilirsiniz. Kumpir yaratıcılığınızı konuşturacağınız yemeklerden biri.

Chopping duty while the potatoes are baking. You can add anything your heart desires. In Turkey, we usually like sliced black olives, corn, and pickles.

 Patatesleriniz yeterince büyükse tam ortadan ikiye kesebilirsiniz. Benimkiler küçük olduğu için yeterince harç doldurmamın tek yolu patatesin kellesini uçurmam

If your potatoes are big enough you can cut them right down the middle. Mine were pretty tiny and cute. So in order to fill them with enough stuff, I had to kinda decapitate them.

 İçlerini çıkardığımız patatesleri tekrar fırın tepsimize diziyoruz. Folyo kullanmanız çok önemli zira az sonra lava yerine peynir püskürten birer yanardağ halini alacaklar.

Carve most of the stuff out and place them back onto your baking tray. Make sure to cover the bottom with foil because they may look all innocent now but they'll turn into hot cheese spewing volcanos momentarily.

 Patatesimizi 4 kaşık terayağ ile eziyoruz.

Mash potatoes with 4 tablespoons (or more) of butter.

 Peynirimizin büyük kısmını ekliyoruz.

Add most of the cheese in. Man I love cheese.

 Ekşi kremamızın büyük bir kısmını yarım bardak sütle karışıma ekliyoruz.

Add in most of your sour cream and half a cup of milk.

 Diğer malzemeleri de ekledikten sonra bol bol tuz ve karabiber (ve dilediğiniz baharat) serpip güzelce karıştırıyoruz.

Add in all the rest of the ingredients, lots of salt and pepper (or seasoning of choice) and mix well.

 Benim yaptığımı yapmayın ve kabuklarınızı alabilecekleri son noktaya hatta ötesine kadar doldurmayın.Meğer patates kabuğu göründüğü kadar sağlam bir şey değilmiş. Birkaç patlama vakası yaşandı ama can kaybı olmadı. Yani servis edilene kadar. Kalan peyniri üstlerine serpin. 175 derecelik fırında 15-20 dakika, peynir eriyene olana dek pişirin.

Don't be like me and fill your skins to the max and beyond. Who knew potato skins could not hold twice their size of filling? Top with more cheese. Bake at 350 for 15-20 minutes, until the cheese is all melted and bubbly.

Son olarak birer kaşık ekşi krema ve yeşil soğan ile süsleyip servis edin. Nom nom nom!!!

Serve with a dollop of sour cream and green onions. So yummy!
